The Head Chef will be responsible for the food program in the restaurant from purchasing to production. He will also lead culinary employees including supervisors to meet the short and medium term operational objectives by ensuring high standards are delivered.

Job Responsibilities: 

  • Manages the day to day operation of the kitchen, whilst working the line and monitoring quality and production
  • Eliminates waste and improves yield
  • Ensure the food safety and HACCP standards applies at all time in the kitchen
  • Draw monthly inventories accurately
  • Execute the recipes as per standard
  • Ensure no missing items are on the menu
  • Explains the daily specials and menu items to the service team
  • Leads the kitchen team and ensures consistency and production of orders
  • Daily interactions with customers in the restaurant and ensuring their satisfaction with the food
  • Negotiates with suppliers along procurement for best product and best value
  • Provides direct supervision to all kitchen employees including objective setting, performance management, motivating, as well as training and coaching.
  • Succession planning
  • Reads basic financial reports and costs menus,
  • Analyzes business volumes to optimize Inventory levels
  • Menu engineering – Analyzes fast and slow sellers and guest preferences
  • Set up PAR Level and analyses sales to ensure PAR levels are accurate.
  • Competitors landscape
  • Monitors new trends to propose new product ideas
  • Consistent creative presentation of food
  • Innovates methods to do things cheaper and faster
  • Working with Principles on new menu ideas to propose for the local market and special promotions
  • Develop and design all new brand kitchens and act as the culinary project manager on new locations.
  • Considerable impact on the kitchen operations, with moderate impact on the restaurant level

Required Qualifications: 

  • Graduate from a reputable culinary college or institute is a must
  • 3 to 4 years of experience of which last 2 years in a Multi-country Multi-outlet experience in similar environment is a plus
  • Previous experience, as a head chef, in a relative cuisine environment is a must
  • In depth knowledge of HACCP requirements and preferably with an advance HACCP certification
  • Fluent in Spoken and written English
  • Excellent presentation skills
  • Should have excellent leadership skills
  • Excellent analytical skills and people management skills
  • Food development, Costing, Managing large team
